I am SO SICK OF ZUCCHINI!!! Why can't my cucumber plant grow 20 cucumbers a week? Or even my green pepper plant? What else is there to make with the stinkin green monsters? I've made zucchini bread, zucchini cookies, zucchini omelets, fried zucchini, sauted zucchini, steamed zucchini, baked zucchini, zucchini soups.....Oh, and I have no more room in my freezer to freeze any more. Anyway, tonight I needed something to do with my Lochlin sized zucchini. I got creative and made stuffed zucchini. It doesn't look like much, but it was really tasty. I have 5 more that same size. Seriously!!! I have zucchini coming out the wazoo! 
The sauce I created was pretty tasty too. I pureed a few of our fresh tomatoes with a little ketchup, mustard, brown sugar, and salt and pepper. It went very well with the meat.

That stuffed zuccini looks oh-so-yummy! If I lived closer, I'd totally take some off your hands! :)
I like to put it in my spaghetti sauce, or the sauce for lasagna. Sounds like you've done anything else I could ever think of. :)
